Vegetable Pancake: Healthy Breakfast

Vegetable Pancake

Ingredients:

  • Boiled potatoes (3-4 small ones)
  • 3-4 table spoon wheat flour
  • One egg (Its optional, but make sure to add ½ tsp cornstarch otherwise)
  • Salt (as per taste)
  • Chopped cabbage (1/4 cup)
  • Roasted sesame
  • Chopped lettuce (better if boiled with some salt)
  • Chopped onion (1/4 a piece)
  • 3-4 tablespoon soya milk (any milk will do)

Instructions:

  • Mix chopped onions, boiled mashed potatoes, lettuce and cabbage
  • Add salt, roasted sesame and a little ground black pepper (Mix again)
  • Time for wheat flour, also crack an egg and beat
  • Since the batter will be a bit thicker, add soya milk (but any kind of milk is fine)
  • Heat a pan with just a half tsp oil (olive oil is better, but can also be cooked without oil on a nonstick pan)
  • Then, add the batter and make it plain with spatula
  • Once one side gets a little red color, flip it and cook the other side too
  • Transfer on a plate and serve
